Summary
Sensory quality of fruits of eggplant (Solanum melongena L.) cultivars in relation to growing conditions. The objective of this study was to examine sensory quality of fruits of eggplant cultivars of different fruit colour: ‘Scorpio’, ‘Zebra’ and ‘Cloud Nine’, which were grown: (1) in a greenhouse in rockwool panels as the growing medium, and (2) in an unheated foil tunnel, in the natural soil. Fruits were harvested in the middle of August, at optimal maturity. Sensory quality of the fruits was analyzed in the panel of 12 experts, using the quantitative descriptive analysis. The set of 19 descriptors of sensory quality plus overall sensory quality were evaluated. Semi-consumer’s test of fl avour palatability was also performed. For the assessment, fruits were roasted for 40 minutes at 180°C and then chilled to the ambient temperature. Results showed that the genotype and growing conditions signifi cantly affected\n most of sensory attributes of the fruits. Fruits picked from the plants grown in the greenhouse were\n characterized by higher overall quality and were also scored higher in respect of most attributes. principal component analysis for quality attributes and fruit samples was also performed, and the multiple regression model for predicting overall quality in relation to the set of sensory attributes\n was calculated.
