Summary
The capsaicinoid and capsinoid contents of the capsicum cultivars Yokaku, Gosiki, Enomi, Cayenne long slim, Hungarian yellow wax and Puchi marble were determined by TLC, while those of other peppers were determined by HPLC. Sweet pepper cultivars California wonder, Murasaki and Shishitoh contained no capsinoid. Some hot pepper cultivars, i.e. Aroma-Af3, Takanotsume and Gosiki, contained only small amounts of capsinoid and large amounts of capsaicinoid. Among the sweet pepper cultivars, only CH-19 Sweet contained a small amount of capsaicinoid and a large amount of capsinoid. Repeated selection of CH-19 Sweet increased the capsinoid content in fruits.
