Summary
The proximate composition, mineral content, total protein, seed protein fractions, amino acids and antinutritional factors of the seeds of Canavalia gladiata and C. ensiformis are tabulated. C. ensiformis contained more crude protein, crude fat, sodium, potassium, calcium, magnesium, phosphorus, iron and manganese than did C. gladiata. In either species, glutamic acid, aspartic acid, isoleucine plus leucine, tyrosine, phenylalanine and lysine were the major amino acids. Both species contained total free phenols, tannins, L-3,4-dihydroxyphenylalanine and trypsin inhibitor activity.
