Summary
Of the red pepper [Capsicum] fruits produced by farms in Korea Republic, 86.8% were for sale, 4.8% were for home consumption and 6.4% were wasted. Farmers rated the quality of dried fruits using parameters including colour, shape after drying and size. Dried fruits were distributed to consumers via different channels. The quality of dried fruits, obtained from a wholesale market, was investigated. First grade fruits were large and heavy with a normal shape; lower grade samples contained small, broken and deteriorated fruits. The proportion of pericarp was not different among grades. High grade fruits contained more sugar than low grade fruits, but capsaicin content was low. One commercial cultivar (Keumtab) was grown and dried in the laboratory and its quality was investigated. Fruits of high quality were large, heavy and containe high contents of sugar and capsanthin, but low contents of capsaicin.
