Summary:
The runner of sweet potato containing about 65% of utilizable carbohydrate was saccharified by two methods, ie., acid hydrolysis and enzymatic hydrolysis. The rate of acid saccharification was propotional to acid concentration, and the yield increased with steaming time, although the rate was diminishing with time, showing the formation and polymerization of Furfural or Hydroxymethyl furfural. The saccharification yield by 4% H2SO4 was up to 38% after 30 hours' steaming at 980C. By enzymes of Aspergillus niger, 20.5% of the total dry matter of the runner was saccharified and the concentration of the produced reducing sugar solution reached up to 3.9% after 46 hours' incubation with wheat bran koji.
