Abstract

Moringa Leaf Powder obtained from the Miracle tree (Moringa oleifera L.) is an excellent source of protein-rich amino acid lysine (Salah Y. Mansour, 2016). Lysin being the first limiting amino acid in cereals affects protein synthesis in the body and gives low-quality protein. (Daniel Tome, 2007). Fortification of moringa leaf powder into the spice mix can give a 6 g of quality protein equivalent to a single large egg. It can also give 7.6 g of fiber, 955 mg of calcium & 2.46 g of lysine which can help to meet the average minimum nutrient requirements of a person. The cost of production is low for oven-dried moringa leaf powder incorporated fried rice spice mix compared to freeze-dried moringa leaf powder incorporated fried rice spice mix. The overall acceptability is high for the control sample without moringa leaf powder before the blindfold and high for the oven-dried moringa leaf powder sample after the blindfold. The availability of this fortified spice mix in markets can help to address nutritional security.
